Vegan Almond Butter Oat Bites

 This Protein rich food is a perfect Vegan snack that is also high in fiber

Vegan Almond Butter Oat Bites

INGREDIENTS:

  • 1 cup rolled oats
  • 1 tablespoon coconut oil (or butter for a non-vegan option)
  • 1/2 cup Nut Zez Almond Butter
  • 1/2 cup confectioner’s sugar + 1 tbsp for sprinkling
  • 1/2 cup almond flour or ground almonds
  • 50g good quality dark chocolate (1 Lindt bar)

DIRECTIONS:

  1. Soak your oats in 1C boiling water for 15-20 minutes.
  2. Preheat oven to 350 and line a pan with parchment paper.
  3. Thoroughly mix all ingredients (besides the chocolate) in a bowl. It should be a cookie dough consistency.
  4. Roll small balls with the circumference of a dime and place them on your pan. They won’t spread so you don’t need a ton of room between them.
  5. Bake at 350 for 15 minutes.
  6. Allow to cool.
  7. Melt chocolate with a double boiler.
  8. Dip the bites into the chocolate and set back on the parchment paper to cool.
  9. When the chocolate has dried, you can sprinkle your bites with icing sugar and enjoy!
