Paleo Banana Bread

Blueberry Banana Bread  with Nut Zez Almond Butter Icing

(Who needs icing when they have Almond Butter? Makes for a great topping )

Almond Butter icing - receipe

Makes 1 large loaf or 2 small loafs | 15 mins prep | 50 mins bake time |

  • 3 cups almond meal/flour (available at most stores or make yourself by blending almonds to a fine powder in a food processor)
  • 2 bananas mashed
  • 3 eggs
  • 1/2 cup honey
  • 1/2 cup coconut oil, melted (or other oil)
  • ½ cup Nut Zez almond butter
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or almonds
  • Optional: ½ cup blueberries, ½ cup raisins or ½ cup chocolate chips
  1. Preheat the oven to 375ºF.
  2. Line one or two pans with parchment paper (or lightly grease pan)
  3. In a large bowl mix together the dry ingredients: almond flour, cinnamon, nutmeg, salt, and baking soda.
  4. In a medium size bowl, whisk together the eggs, honey, mashed bananas, vanilla and almond butter. Mix together until combined.
  5. Stir the wet ingredients into the dry ingredients until combined. Fold in the chopped walnuts, blueberries, raisins, and/or chocolate chips
  6. Pour the batter into a large bread pan and bake for 40-50 minutes until the center is firm. The top does brown nicely on this bread so be sure to put on bottom rack (this will avoid over browning)
  7. Allow to cool. Remove from pan.
  8. Slice and drizzle with  Nut Zez Almond butter
