Start your day with this high in fiber, high protein breakfast
Ingredients:
3 1/2 cups 2% milk
1 1/2 cups Irish oats (steel cut)
1 large apple , peeled and diced
1/2 tsp cinnamon
1/2 tsp pure vanilla
2/3 cups dried cranberries
2/3 cups chopped walnuts ( or your choice of nut)
1 Tbs Honey Pecan Oil (drained from Nut Zez Honey Pecan Butters)
2 Tbs Nut Zez Honey Pecan Butter
DIRECTIONS:
Preheat oven to 375 degrees
In a saucepan, heat milk and Honey Pecan Oil on medium heat until hot ( not boiling). Stir in Oats, Cinnamon, Vanilla and Nut Zez Honey Pecan Butter. Cook for several minutes, stirring occasionally, until the mixture just returns to boil and begins to thicken . Remove from heat. Add cranberries, nuts and apples. Stir well.
Grease a 1 1/2 qt casserole or baking dish. Pour the mixture into this dish. Sprinkle with fresh grated cinnamon and place pecan pieces on top (optional). Cover with foil and bake for 15 minutes
Makes 14 servings ( 3/4 cup each)
